From our pitch..
With great respect for nature we grow and sow barley distico from beer and wheat in the hills of our land of Tuscany, in the area of Chianti Aretino. The barley and wheat we grow are free of pesticides, additives and chemicals in general.
Our selected seed is malt in total autonomy within our company giving life to one refined beer, agricultural, genuineand KM Zero.
..TO MALTING..
After the harvest, the barley is selected with an antique twig from the end of the 19th century and only the best grains will be used for malting.
The grains selected as best are immersed in large tanks of water and mixed to promote oxygenation.
The "wet" barley is spread in malterial, after about three days the seed begins its germination and you can glimpse what in brewing jargon is called the "radicle".
After that it is dried naturally to lower the moisture in the grains.
Once dry, we toast it in an oven built by us and we will have thus obtained our native and 100% agricultural malt.
